Abstract

Artocarpus altilis popularly known as breadfruit, is considered an unconventional food plant (PANCs), as it is a staple food for the population in its region of occurrence, as it is rich in carbohydrates, grows quickly and can be used both its ripe fruit and its leaves cooked in various recipes. Regarding the pharmacological and nutritional action, studies have shown its use as a healing agent, treatment of hypertension, liver and spleen diseases, diabetes, with antipyretic, antiviral, antifungal, antibacterial and antituberculosis action. Phytochemical studies of these species demonstrate the presence of tannins, glycosides, terpenoids, flavones, saponins and anthraquinones. Therefore, this project aims to evaluate the extract and flavonoid fraction of the leaves and pulp of the fruit of Artocarpus altilis for antioxidant potential, through the tests of DPPH, FRAP, NO sequestration and lipid peroxidation by the TBARS test, and anti-gland activity by using Electrophoresis Relative Mobility (MRE) tests, determination of free amine groups; serum bovine albumin (BSA / Glucose) tests. It also aims to measure polyphenols, flavonoids and reducing sugars in extracts and fractions. Develop and characterize the microcapsules produced with the different extracts.
