Abstract

In this work, the pectin-rich fractions of rejected fruit will be obtained through extraction or dehydration processes, at a pilot-plant level. The physicochemical characterization of raw material, the kinetics of the process, mathematical modeling, characterization of the resulted fractions, determination of the product stability will be conducted. The pulped fruits present high content of bioactive compounds and they are discarded improperly in the market. Therefore, this work can result in a functional ingredient that can be used in food formulations. (AU)
