Abstract

Mycotoxins are secondary metabolites produced by fungi that occur naturally in foodstuffs, which can cause a large variety of toxic effects on vertebrates, including humans. The fact that some mycotoxins are carcinogenic (e.g., aflatoxins) and could be detected in breast milk, food and feedstuffs constitutes a serious human and animal health threat, mainly to children and young animals due to their high physiological vulnerability. The aim of this Doctorate Project (as a Work Package of a Thematic Project) is to determine the co-occurrence of mycotoxins in infant formula, fruit- and cereal-based foods traded in Pirassununga and Ribeirão Preto/SP. Samples will be collected in the cities of Pirassununga and Ribeirão Preto, both located in the Northeast of the state of São Paulo, from October 2023 until September 2024. In each city, samples of five types of food products intended for infant consumption, from the brands showing the greatest trade volume, will be collected in supermarkets, as follows: infant formulae, follow-on formulae, cereal-based foods for babies, maize-based foods for babies, and fruit-based products. Sampling procedures will be conducted four times over a 1-year period, totaling 400 samples during the study. Analyses will be conducted using liquid chromatography coupled to tandem mass spectrometry. (AU)
