Abstract

In vitro simulation of gastrointestinal digestion is widely employed to determine the bioaccessibility of mineral nutrients. In the project (20/13635-8) to which this proposal is linked, previous assays were carried out to evaluation of minerals bioaccessibility in non-conventional food plants (ora-pro-nobis, taioba and serralha). However, it was not possible to quantify some minerals in digested samples, due to their high concentrations in the analytical blanks (fluids), which resulted in high limits of quantification (LOQ). Muleya et al. (2021a) proposed a stable isotope approach to discriminate the minerals derived from samples and reagents, allowing the accurately determination of Fe and Zn bioaccessibility. Thus, this approach can be applied to overcome the challenges encountered during the study of the non-conventional food plants. (AU)
