Abstract

This project aims to study the bioaccessibility and bioavailability of nutrients and contaminants in beef cuts. This will quantify the total content of Ca, Cd, Cr, Cu, Fe, K, Mg, Mn, P, Pb, Se, V and Zn, present in different cuts of beef. In addition, cell type are used Caco-2, which are epithelial cells derived from human colon located in the small intestine to predict the in vitro made effective absorption by the body (bioavailability), the nutrients present in the sample. Bioavailability studies using the cell model see being developed and widely disseminated internationally, but in Brazil there are few studies related to this line of research, and, most of the work describes the determination of the bioavailable fraction referring to organic components in food, not being reported studies related to the determination of the bioavailable fraction regarding its inorganic components. For in vitro studies bioaccessibility enzymes are used to simulate gastrointestinal digestion. Then, the digest will be used in bioavailability study with Caco-2 cells. The quantification of the total content of Ca, Cd, Cr, Cu, Fe, K, Mg, Mn, P, Pb, Se, V and Zn. A knowledge of the contents of Fe, Zn, Se, Cd and Pb in the fractions bioaccessible and bioavailable will be done by optical emission spectrometry with inductively coupled plasma, ICP OES, and/or graphite furnace atomic absorption spectrometry, GF AAS, depending on the level of concentration in those portions of the element analyzed. It is hoped that this proposal contribute to the knowledge of the nutritional value of different cuts of beef and also determine which is the effective absorption of nutrients by the body. (AU)
