Prof. Fabiana holds a degree in Food Engineering from the University of Campinas (2005), a master's degree in Food Engineering from the University of Campinas (2008), a PhD in Food Engineering from the University of Campinas (2012) and a post-doctorate in Petroleum Engineering from the Center for Petroleum Studies (CEPETRO) of the University of Campinas (UNICAMP). She is currently an Associate Professor D1 at the Federal University of São Paulo (UNIFESP) working in the following areas: encapsulation, emulsions, rheology, gelation and interaction between proteins and polysaccharides, with a focus on the development of plant-based products.
