Improvement of biogenic amines in grape juice from Vitis labrusca and hybrid grapes grown in different training systems

Abstract

Bioactive amines present in grapes and their derivatives are used as quality markers and have important physiological functions in plants and humans. We quantified the biogenic amines and antioxidant activity in whole juices of Vitis labrusca and hybrid grapes developed in Brazil. The grapes used were V. labrusca ('Bordo' and 'Isabel') and Brazilian hybrids ('IAC 138-22 Maximo' and 'BRS Violeta') grafted onto 'IAC 766 Campinas' rootstock. All vines were trained in low and high vertical shoot positions. The training systems and genotypes used were highly related to the presence of amino compounds and antioxidants. The juices from 'Bordo', 'IAC 138-22 Maximo' and 'BRS Violeta' grapes presented higher contents of beneficial biogenic amines. All juices contained biogenic amines at considerable levels and, consequently, had high biological potential. A high vertical shoot position system is recommended to improve dopamine, melatonin, and serotonin levels. (AU)
