Abstract

Sweeteners are food additives commonly used as sugar substitutes in the diet of diabetic patients. The consumption of sweeteners is considered safe when their intake is below the Acceptable Daily Intake (ADI). National data on the intake of sweeteners are scarce, and there is no information on the exposure of diabetic children to these additives. Thus, this project aims to assess the intake of sweeteners (potassium acesulfame, aspartame, sodium cyclamate, saccharin, sucralose, steviol glycosides, neotame and advantame) by diabetic children aged 2 to 12 years and to verify the understanding of the labels of diet/light foods by their parents/guardians. The Estimated Daily Intake (EDI) of sweeteners will be calculated by deterministic and probabilistic models in Tier 3, using: i) food consumption information from a Food Frequency Questionnaire and ii) analytical data on the occurrence of sweeteners in commercial products, which will be obtained through a method to be developed and validated using high performance liquid chromatography coupled to mass spectrometry (LC-MS/MS). The EDI will be used to characterize the risk of sweetener consumption through its comparison with ADI. The understanding of labels will be assessed through an online questionnaire. It is expected that the data generated by this research can contribute to the establishment of regulatory and risk management actions in order to ensure the consumer's safety regarding the intake of sweeteners through the diet.
