Abstract

High meat intake, especially red and processed meat, and low fruit and vegetable intake have been associated with carcinogenesis and cardiovascular disease. One of the hypotheses that justify meat as a cause of these diseases is the cooking preparation process, in which heterocyclic amines can be formed. These amines can form toxic substances that can generate oxidative stress and DNA damage. Fruits and vegetables have antioxidants, which can reduce oxidative stress. However, the metabolic content may vary due to individual genetic factors. The main purpose of this study is to evaluate the relationship between meat, heterocyclic amines, fruit and vegetable intake and oxidative stress biomarkers, considering genetic, social, demographics and lifestyle factors in residents of Sao Paulo - participants in the Health Survey ISA - Capital. The study is a large cross-sectional health survey performed in Sao Paulo. Diet was assessed by 24-Hour dietary recalls and food propensity questionnaire. DNA will be extracted by salt method. Polymorphic variants will be identified by allele-specific PCR. To analyze stress oxidative will be measured malondialdehyde and DNA adducts. Statistical analysis will be performed by Generalized Linear Models in STATA®. For all analyses, P < 0.05 will be considered statistically significant. (AU)
