Abstract

High meat intake has been related with high risk to cancer. One of answer to meat has been related with cancer is the cooking methods that it is prepared, which it forms heterocyclic amines. These amines can form toxic substances during their metabolism, that is related with oxidative stress and DNA damage. However, people can present different answers to same dietetic exposition, they can present different risks or benefits with the same food intake. The study objective is evaluate the relationship between meat and heterocyclic amines intake with biomarkers for exposure to cancer (DNA adducts and malondialdehyde), considering the susceptibility biomarkers (enzymes polymorphisms) and social, demographics and life style factors in residents of city of Sao Pulo. Large cross-sectional health survey. Diet was assessed by 24-Hour dietary recalls and food propensity questionnaire. DNA will be extracted by salt method. Polymorphic variants will be identified by allele-specific PCR. The cancer risk will be analyzed by DNA adducts and malondialdehyde. Generalized Linear Models in STATA® will be used and P < 0.05 will be considered statistically significant. (AU)
