Abstract

The milk , in addition to its nutritional importance , is the sixth product of agribusiness , surpassing coffee and rice. This segment of agribusiness is responsible for generating more than 3.6 million direct jobs and Brazil is among the six largest world producers of milk. At present , the issue of " quality and safety " of food , has received increased attention from the authorities , industries , professionals, producers and consumers in general . Although pasteurization of milk to ensure the destruction of most pathogens , if present in raw milk , staphylococcal enterotoxin may remain in pasteurized milk and its derivatives , due to their high thermal stability. The relevance of this project is based on the need for risk assessment of staphylococcal mastitis in the food security of consumers of milk , the identification of enterotoxin as well as the presence of the mecA resistance gene in order to enable the development of strategies to minimize their impact on public and animal health . For this, we propose to study ten small dairy farms in the region of Bauru - SP , which are part of an association of small producers, with milking and average production of 100 liters / day. Microbiological and biochemical identification of all samples of staphylococci , coagulase positive ( CPS ) and negative ( CoNS ) , isolated from all lactating cows will be held, as well as isolates of staphylococci coming from the bulk tanks that receive milk of all properties . Will also be assessed the antimicrobial susceptibility profile of CPS samples and CNS isolated from the teats, as well as the occurrence of mecA gene of oxacillin resistance and the presence of genes encoding enterotoxins A1 , A2 , B1 , B2 , C1 , C2 , D1 and D2 from milk samples of animals and bulk tanks.
