Evaluation of a new sport drink containing probiotic, pomegranate pulp (Punica granatum L.) and whey protein isolated and this effect on performance, immune response and microbiota

Abstract

Several strategies have been employed to improve the sports performance, and some of these pose health risks. Supplementation of the diet of athletes with the whey protein is a safe and effective due to the high concentration of branched chain amino acids of these proteins which play a key role in stimulating protein synthesis. Regular consumption of probiotics by sportsmen can lead numerous benefits mainly the activation of the immune system, which is of great importance due to the high risk to which physical activities practitioners are subject to experience depression of immune function later to extensive tests. Phenolics present in pomegranate can combat oxidative stress and improve performance, as noted in a previous study of this research group. This project proposes the development of fermented milk designed for athletes adding benefits of using probiotics, whey protein isolate (WPI) and pomegranate pulp (PP). The experiment will be conducted in a cascade, with the following steps: (A) a choice of 1 between 6 probiotic strains for assessment of their viability in the presence of 5% added pomegranate pulp; (B) evaluate the use of 1-5% of pomegranate pulp on antioxidant activity, viability of probiotic culture and performance, immunological parameters and microbiota of rats supplemented with the developed drink and submitted to acute exercise on a treadmill; (C) determine optimal sensory parameters of the product by just-about right scale with panelists; (D) preparation of the final product and shelf life evaluation during refrigerated storage period of 28 days by physical-chemical, microbiological and sensory tests.
