Abstract

The non-digestible oligosaccharides (NDOs) have been receiving much attention since they have important biological properties promoting beneficial health effects. Its ability to selectively stimulate the growth of bacteria of the intestinal flora produces various beneficial health like immune system improve and decreasing in the proliferation of pathogenic microorganisms. Among the various NDOs fructo-oligossccharides and galacto-oligosaccharides receive attention due its recognized prebiotic properties and new NDOs obtained from hemicellulose (xylo-oligosaccharides and mannano-oligosaccharides) due the potential bioactivities and prebiotic properties. In this sense, the development of enzyme cocktails that have activity, stability and selectivity, as well the choice of inexpensive substrates are important aspects for production on a large scale NDOs as a food supplement. In this context, the objective of this project is the production and immobilization of enzymes (galactosidase enzyme. xylanase and mannanase) on membranes, associated with the development of an enzymatic membrane reactor for the production of non-digestible oligosaccharides using low cost substrates. The study of the fermentation of NDOs obtained. by butyrate producing microorganisms that are present in the intestinal microbiota is another important objective, because the wide range bioactivities of butyrate and the poor information about stimulation of the growth of these bacteria by prebiotic compounds.
