Abstract

Agroindustrial waste, besides being abundant, is the source of several components of industrial interest, which can be exploited and used for the production of bioactive molecules of high value in an inexpensive, renewable and sustainable way. The sugarcane straw generated during cane processing is rich in xylan, which, after extraction, is susceptible to the action of the xylanase enzymes for the production of xylo-oligosaccharides, which shows probiotic potential, improving the viability of prebiotic microorganisms in food. Thus, this present work seeks to explore the application of sugarcane straw to the production of xylo-oligosaccharides through the action of the xylanase enzyme, produced from the heterologous expression of Cryptococcus flavescens isolated from the Brazilian Biome, and to study the symbiotic association of these components and probiotic bacteria, aiming the production of symbiotic microparticles. The digestibility of the microcapsules obtained will be analyzed by "in vitro" tests, and the resistance to the hydrolysis by enzymes of the digestive tract, as well as the stimulation of the growth of the probiotic bacteria, will be evaluated. It is expected at the end of the project that the microcapsules produced from xylo-oligosaccharides from sugarcane straw present symbiotic potential so they can be applied industrially as functional ingredients in food products. We would also like to mention that this project is directly integrated to FAPESP Thematic Project (2015 / 20630-4) entitled "Integrated Development of Biorefinery and Sugarcane Bioethanol Plant with Zero CO2 Emission: Routes to convert renewable resources into bio-products and bio-electricity", in which we are inserted.
