(EN) The present invention relates to a method for producing symbiotic microparticles, symbiotic microparticles, and the use thereof. The invention pertains to the field of food and bioprocess engineering, specifically to the inclusion in functional foods, preferably yogurts, margarines, dairy drinks, or lactose-free drinks. The method for producing microparticles which is described in the present invention uses the application of recombinant endoxylanase enzymes and the association of XOS with the biopolymer matrix to produce microparticles of suitable diameter, with small pores and crystalline structure, providing optimum resistance to the acid conditions of the stomach and maintaining the viability of the encapsulated probiotics both during storage and during the digestibility test.
