Abstract

The anthocyanins are naturally occurring pigments responsible for the purple, red and blue colors of the majority of fruits and flowers. The basic chromophore of anthocyanins is a flavylium cation, typically substituted with several hydroxyl and/or methoxyl groups. In nature, the color of anthocyanins is modulated and/or stabilized by complexation with metal ions or with colorless organic molecules (a copigment). In this project, we propose a study of the interaction of model compounds analogous to anthocyanins (synthetic hydroxyflavylium ions and hydroxy/methoxyflavylium ions) with metal ions and with organic copigments, as well as a search for synergy in the ternary complexation of these anthocyanin models with both metal ions and copigments. These results will form the basis for an understanding of the anthocyanin-metal ion-copigment interactions involved in the stabilization of the color of anthocyanins in natura. (AU)
