Abstract The Brazilian meat has a favorable position in relation of world market, considering that the investments in research of animal breeding and the certification of origin of the product increased and the diseases control is effective. From nutritional viewpoint, the meat is an excellent source of essential amino acids, lipids, vitamins and minerals for human been feed. Despite of the importance of these products for economy and mainly for human nutrition, the objective of this research proposal is to evaluate the low-field nuclear magnetic resonance (LF-NMR) for analysis of some quality parameters of meat products. Firstly, there will be emphasis on three properties: (1) fat content, (2) tenderness and (3) juiciness. These characteristics are included on that ones most used by consumers for meat quality evaluations. The main scientific contribution of this research proposal is to generate no-invasive and safe analytical methods, that will give fastness for quality control analysis of these important products for human nutrition and the Brazilian agribusiness. The generated knowledge from this proposal could be useful for the industry and regulatory agencies, mainly with the goal to further improve the inspection procedures. The main advantage of this proposal will be the possibility of adapting to on-line processes, or even, in vivo analyses. (AU) | |
