Abstract

The acerola and camu-camu contains a high content of vitamin C and are a source of different bioactive compounds, but vitamin C is easily oxidized by several factors, in addition, these fruits are not easily accessible to most consumers in certain regions of the country. The oral disintegration films are materials developed from the macromolecules, which disintegrate when in contact with saliva, among macromolecules used to produce starch and gelatin have great use in light of the rapid dissolution. In this context, the general objective of this project is the production of oral disintegration films based on starch and gelatin, additives with dry extract (obtained from "spray dryer"), acerola and/or camu-camu as an alternative to supply of vitamin C, will be further evaluated the stability of the active components in the films produced. The concentration of dry extract of acerola or camu-camu in oral disintegrating films will be taken into consideration of the RDI index (recommended daily intake) by ANVISA with the objective to use concentrations that meet the daily requirement for vitamin C in adults. The characterization of oral disintegrating films will be performed the following tests: thickness, mechanical properties, contact angle, Fourier transform infrared spectroscopy, differential scanning calorimetry, scanning electron microscopy, content of vitamin C, antioxidant activity, antimicrobial activity, assessing the stability of vitamin C, in vitro release and sensory evaluation.
