Abstract

Currently, salmonellosis is one of the most important zoonoses on public health in the world, due to the high endemicity, mortality, and difficulty of control. In Brazil, several studies reported high frequency pigs eliminating agent in different stages of the production system. In São Paulo, you can find different realities when it comes to good manufacturing practices and quality control of products of animal origin, especially when one considers the points of sale to the consumer. Contamination by agents of foodborne infections is present and has been poorly evaluated in these environments. This study is part of an international collaboration involving the North Carolina State University and the University of Surrey to act as partners in the realization of part of the proposed tests and allow the training and knowledge exchange between his research group and the student responsible for the project. The main objectives are to assess the presence of Salmonella enterica in pork cuts sold in local markets, butchers and small markets distributed in five regions of São Paulo. The isolated strains will be characterized according to serotype, antimicrobial resistance profile, genotypic profile by pulsed field gel electrophoresis (PFGE) and typing by sequencing multiple sites (multilocus sequence typing - MLST). The data will be compared to the profiles of strains originating from swine farms and food poisoning cases reported in the country
