Effect of beetroot (Beta vulgaris L .) by-products on oxidative stress of high-fat diet rats

Abstract

Vegetables stalks and leaves have a significant amount of bioactive compounds, especially phenolic compounds that are waste during domestic and industrial processes. Beetroots (Beta vulgaris L.) byproducts (stalks, leaves, husks or bagasse) presented cytotoxic capacity and expressive ability in improving the response to oxidative stress in animals subjected to high-fat diet. Thus, this project aims to evaluate the effect of beetroot stalks and leaves on oxidative stress in animals subjected to high-fat diet. The leaves and stalks will be dehydrate in a conventional oven in order to simulate the domestic cooking process, and then be added to the animal (8% of total phenolic compounds). The animals (n = 30) will be divided into two groups (maintenance diet and high-fat diet) containning dehydrated stalks and leaves or ethanol extract of dehydrated stalks and leaves. At the end of the experiment (8 weeks), the animals will be sacrificed and blood and liver tissue will be used for the following analyzes: lipid profile, concentration of Malondialdehyde (MDA), plasma antioxidant activity by ORAC method, antioxidant activity of enzymes superoxide dismutase (SOD ), catalase (CAT), glutathione reductase (GR) and glutathione peroxidase (GPx). The results will be compared between groups using analysis of variance (ANOVA) at a significance level of 5% probability.
