Leaves and stalks of beet (Beta vulgaris L.): characterization and effects of the antioxidant capacity in obese and dyslipidemic

Abstract

In Brazil, the incidence of obesity in all age groups has been growing, and it has serious consequences to health. Recent evidence suggests that oxidative stress may be an important component involved in the complications associated with obesity. The oxidation of the LDL particle is a factor that is associated with the development of atherosclerosis, one of the complications involved in cardiovascular disorders commonly present in patients with obesity. Bioactive compounds in foods exhibit anti-inflammatory and antioxidant properties. The leaves and stems of beet has showed higher total phenolic contents that the root. Some phenolic compounds such as betaninas, quercetin and myricetin are potent agents that can reduce and / or inhibit oxidation of LDL cholesterol, reducing changes in endothelial structure. This study aims to characterize and evaluate the antioxidant potential of leaves and stems beet freeze-dried, and study the antioxidant effect of the leaves and stems beet in obese with dyslipidemia volunteers. For this, we performed the following analysis: physicochemical and microbial characterization; identification by chromatographic methods major bioactive compounds; evaluation of the antioxidant capacity by in vitro methods (ABTS, ORAC, inhibition of LDL oxidation) and in cell culture; evaluation of the use of leaves and stems beet lyophilized as adjunctive therapy in the treatment of dyslipidemia associated with obesity by double-blind clinical study in obese patients treated at AME / Limeira, SP (AU)
