Abstract

The maize (Zea mays L.) is an important source of food, and also processed products for industry. In general, the popcorn kernels are more susceptible to diseases and pests, and differs from common maize due to its characteristic of expansion at high temperatures. Contamination of food with mycotoxins cause great concern due to their potential genotoxic and carcinogenic, and still your possible additive or synergistic effects that may result from their combination in a single food. In this study, will be developed and compared two multiresidues methods based on different procedures for sample preparation: QuEChERS and SPE online using liquid chromatography with electrospray ionization tandem mass spectrometry (LC-ESI-MS/MS) for determination of fumonisins (B1, B2, and B3) in popcorn. The monitoring of mycotoxins in foods is extremely important for public health, aiming the adoption of technological measures in order to reduce exposure food considered at risk of these toxins. For this purpose will be collected commercial samples of popcorn in supermarkets in the city of Piracicaba - SP and quantified with the methodology of better performance.
