Abstract

The coconut water is a beverage whose interest is increasing not only due to its sensory properties, but also due to its nutritional characteristics, being a great potential market and exports to Brazil. Even so, several challenges limit the product acceptance, being the inactivation of the enzymes polyphenol oxidase (PPO) and peroxidase (POD), while keeping the natural product sensory properties, the more expressive one. Although the inactivation of these enzymes has been extensively studied in coconut water, both by conventional and emerging technologies, the technologies evaluated so far result in undesirable sensory changes and/or they are not effective in the inactivation of the that enzymes. Further, the technology of ultraviolet radiation (UV) is shown as a potential alternative, although it has been not yet studied. This study aims to evaluate the UV technology as an alternative for the inactivation of PPO and POD enzymes in coconut water. The enzymes inactivation will be evaluated and modelled considering three possible kinetic behaviours. Further, it will be evaluated the effect of processing on the main physic-chemical properties of coconut water. Based on the obtained results, the optimum condition will be proposed for processing of coconut water using UV technology. This project will contribute to the academic research and scientific development, as well as to the industrial processes development and Brazilian production valorisation. (AU)
