Abstract

The cambuci (Campomanesia phaea) is one of Brazil's native fruit species belonging to the family of Myrtaceae, the origin of the Atlantic Forest. The mirtáceas possess great economic potential, and many of its species used for fresh consumption and industry, however, only a small portion of these fruit species is commercially recognized. An example is the cambuci, which has wide use, but it is still underexplored due to the lack of commercially investments and research. The fruits of C. phaea are considered exotic, possess wealth in the nutritional and sensory point of view, besides possessing chemical constituents in the leaves of appreciated value for drug-cosmetic industries. The proposed project aims to evaluate the effect of application of pasteurization in the life of the pulp of cambuci through physicochemical analysis of pH, color, water activity, soluble solids, titratable acidity ratio, the total sugar and reducing, and chlorophyll analysis performed during periods 1, 15, 30, 45, 60, 75 and 90 days; Besides the characterization of the fruit by proximate analysis. The results of physicochemical analyzes will be submitted to analysis of variance, and their averages are compared by the Tukey test, and evaluated through the statistical program Statistical Analysis System.
