Abstract

One possible cause of hospital infection is the consumption of contaminated food. Thus, the safe food supply is essential to the nutrition service of the hospital. Along foodborne illness, the bacterial origin are seen as the most comprehensive public health problem in the world. We highlight those caused by Staphylococcus aureus, a bacterium mostly found in the nasal passages, mouth and skin of the human population. In this context, food contamination, manipulators and utensils is an important link between food, patients and foodborne illness. The spread of these bacteria is not known in a teaching hospital in Presidente Prudente, SP. This project aims to analyze the genetic similarity and the ability or aptitude (Environmental Fitness) of S. aureus in different environments of the nutrition service of a teaching hospital. Samples will be collected in two different periods of the year, from three areas of the nutrition service (general production, milk dispensary and preparation of enteral nutrition), handlers, equipment and benches to carry the Staphylococcus aureus identification evidence. It will also be conducted to evaluate the genetic similarity of these isolates using RAPD molecular markers, characterizing, possible outbreaks of food contamination to finally propose dissemination of measures to control micro-organisms, guaranteeing food security to hospital users in study and consequently the population of the region.
