Abstract

Beer consumption is significant and there is an undisputed growth trend. The quality of beer and the ingredients used in its production are and tend to be increasingly relevant. In this context, it is necessary to highlight the aspects related to possible contaminants and their consequent impacts on the final product and, on the future consumption of the beverage. For these reasons, the aim of the present project is to develop methods for the determination of multiple mycotoxins and beer gushing potential. The methodologies will be carried out and validated by ultra-performance liquid chromatography with tandem mass spectrometry (UPLC-MS/MS) and also other references for beer gushing potential analyses will be used. The new methods developed and validated to detect several mycotoxins in brewing sources and beer could be implemented in the research of Brazilian groups and also will provide significant knowledge about the raw material used in the beer industry. Other aspects considering beer gushing can be solved and also could be applied to the industry.
