Abstract

In 2005, Simpson and Raubenheimer, based on experimental studies, postulated that human diets with insufficient protein content would lead to excessive calorie consumption (Protein Leverage Hypothesis - PLH), mainly due to a physiological priority to mantain protein intake constant. In this way, factors leading to a reduction in the protein content of contemporary diets could lead to an increase in calorie consumption and thus explain at least in part the worldwide epidemic of obesity. One of these factors, according to these authors, may be the tendency observed in several countries of substituting minimally processed foods by ultra-processed foods. In her doctoral dissertation, analyzing population data from national research on food consumption in the US, the candidate found evidence supporting PLH and the role of ultra-processed foods in increasing calorie consumption (Martinez Steele et al 2017). In this project, carried out in collaboration with Simpson and Raubenheimer, she will extend this study to include six other countries (Brazil, Colombia, Chile, Canada, the United Kingdom and Australia), always using national data on food consumption as data sources. This project is part of the NUPENS/USP thematic project studying the effects of ultra-processed food consumption on diet quality and human health in seven countries. (AU)
