Abstract

The production and processing of fruits are important activities for the Brazilian economy. However, the processing of fruit generates a large amount of waste, which when discarded in inappropriate places, causes a major environmental problem. Orange and banana are the most produced and consumed fruits in the Brazilian territory, and the residues generated by the processing of these fruits are composed mainly of peels; which, in turn, are rich in phenolic acids. Among the phenolic acids found in banana and orange peels; ferulic, vanillic and p-coumaric acids can be highlighted, since they are used by the food, pharmaceutical and cosmetic industries to obtain a wide variety of products. In view of the reuse of banana and orange peels, the phenolic acids found in these residues can be extracted and used to obtain higher-added value products, which gives these substances a more profitable and environmentally friendly destination. In this context, the characterization of banana and orange peels for later reuse is of fundamental importance; thus, the objective of this research project is the development of disposable electrochemical sensors based on 3D graphene oxide, metal nanoparticles and molecularly imprinted polymers for the determination of ferulic, vanillic and p-coumaric acids in these fruticulture waste.
