Abstract

Anthocyanins are naturally occurring water-soluble plant pigments. They have antioxidant, anti-inflammatory, anti-tumor and immunomodulatory properties. Although some advanced techniques are available for extracting anthocyanins, some limitations make it difficult to obtain and isolate them. In view of this, a viable extraction method that is more efficient and involves less organic solvent, easy extraction and rapid separation of anthocyanins is urgently needed. Therefore, the aim of this project is to develop a method for obtaining biohybrid nanoparticles for the adsorption and release of anthocyanins. After obtaining the nanoparticles, the aim is to evaluate their surface characteristics, considering the chemical functional groups and positive or negative charge through the choice of biopolymer. The aim is also to evaluate the biopolymer/silica system for obtaining nanoparticles, since the use of silica in nanostructured products makes them more robust and insoluble. Finally, the aim is to evaluate the preparation and obtaining of nanoparticles with magnetic materials to facilitate their separation.
