The present research proposes to numerically simulate extraction processes taking place in fixed beds containing lyophilized Brazil cherry (Eugenia uniflora L.), using supercritical carbon dioxide. Accordingly, an existing finite-volume simulator will be suitably adapted, which has been employed for transport phenomena within porous media. It is worth mentioning that the experimental counterpart of the proposed extraction process is currently under way at the Laboratory of High-Pressure Technology and Natural Products, located at the Faculty of Animal Sciences and Food Engineering, University of São Paulo. Such experimental research will provide data in order to validate the simulator. Aiming at the design of equipment for the food industry, the adapted simulator is intended to become a reliable and efficient engineering tool for assessment and optimization of the extraction process under investigation. Bearing in mind its preliminary character for future developments, the present proposal aims at broadening the application horizon towards extraction processes involving other natural products, particularly those yet less exploited either industrially or commercially.
