Abstract

This study aimed to evaluate the effects of the rootstocks and training systems on the gaseous exchange, enzymatic profile, production variables, bioactive compounds, biogenic amines and antioxidant activity of skins and pulps of grapes, as well as whole grape juices Vitis labrusca and hybrid grapes. The experiment was carried in two productive cycles at the APTA Fruit Center of the Agronomic Institute (IAC), in Jundiaí - SP, Brazil. A completely randomized block design was adopted with 2 x 2 factorial scheme, being two rootstocks (‘IAC 766 Campinas’ and 106-8 ‘Mgt’) and two training systems (high and low vertical shoot position) in two Vitis labrusca (‘Bordô’ and ‘Isabel’) and two hybrids (IAC 138-22 ‘Máximo’ and ‘BRS Violeta’) with five replications of three vines per experimental plot. The data were submitted to analysis of variance and the means were compared by the Tukey’s test (p <0.05). The rootstocks and training systems influenced the gaseous exchange, enzymatic profile, production and quality of grapes and whole juices of the grapes studied. The data gathered conclude that, in general, to obtain the better physiological, quantitative and qualitative conditions, the winemakers could use the ‘IAC 766 Campinas’ rootstock and the high vertical shoot position in the cultivation of grapevines, as they are the best interactions of canopy x rootstocks x training systems, thus being a promising tool in the production of high quality grapes and grape juices with physiological and biological potential.
