His research lines are notable for their focus on innovation and functional health, encompassing: the development of plant-based foods with functional properties for intestinal microbiota modulation and obesity management; the utilization of foodomics techniques and the use of lactic acid bacteria for reducing protein allergenicity (CMPA); and the elaboration and standardization of fermented probiotic beverages based on fruits, goat's milk, and soy. The teaching experience spans Higher Education (Faculdades Oswaldo Cruz) and Basic Education, effectively combining the scientific rigor of research with a strong command of active methodologies.
