Abstract

The use of plants and extracts as therapies for the treatment of numerous diseases has been known since antiquity. Many of the beneficial health effects and performance in infectious treatments are due to the esters composition. The study of enzymatic synthesis esters, with antimicrobial capacity is fundamental importance, due the to search for natural compounds in substitution to the chemicals additive, usually found in foods. The objective of this study is the synthesis of geraniol esters, through enzymatic esterification using different reaction media, with the study of the antimicrobial activity. The study will be carried out using commercial lipases immobilized Novozym 435 and NS88011, in a batch reactor and packed bed reactor. As substrates will be used geraniol and citronella oil (Cymbopogon winterianus) and different acyl donors - cinnamic and acetic acids. The esters produced will be nanoencapsulated for nanoemulsions (NE) and polymeric nanocapsules (NC) methods, which have different release kinetics. Finally, the antimicrobial capacity will be verified, using the Kirby-Bauer agar diffusion method and the determination of the Minimum Inhibitory Concentration (MIC) of the free and encapsulated esters.
