Abstract

β-Cryptoxanthin is a carotenoid with vitamin A activity, abundantly found in many widely consumed fruits. However, there is liUle information on this carotenoid bioavailability which, in turn, is a determining factor for their contribution to the intake of vitamin A. β-Cryptoxanthin is considered to have half of the bioconversion factor of β-carotene based on theoretical yield. Dietary assessment of vitamin A shows intakes bellow the recommended dietary intake (DRI) in many countries (including a percentage of the Spanish, Brazilian and Panamanian population); however, it does not reflect the high concentrations of the biochemical marker (serum retinol) that leads to quite lower percentages of deficiency in the vitamin A status. These facts suggest that the contribution of provitamin A carotenoids could be higher than it is assumed. This proposal is focused on the bioaccessibility of two provitamin A carotenoids as a key concept of the global term bioavailability related to the availability of the bioactive compounds present in the food matrix during digestion that become available for intestinal absorption. A common method for the β-cryptoxanthin and β-carotene bioaccessibility assessment will be standardized and applied to fruits that are major contributors to the vitamin A intake in Brazil, Panamá and Spain. These results will be included in the database of carotenoids which is being developed at the IBERCAROT Network, in which all the participants of this proposal are members. (AU)
