Abstract

Vitamins are organic substances necessary for maintaining the body's metabolic functions. These substances, though essential for metabolism, are not synthesized by the body and therefore need to be obtained through the diet. As a result of changes in dietary patterns of the population, vitamin supplements and fortified foods are becoming important sources of vitamins. Information labels of supplements must be accurate and, for surveillance purposes, methods for assuring the quality of these products are essential. A variety of vitamin supplements currently marketed leads to necessity for development of simple methods with high producibility. Reliable information on the levels of vitamins can only be obtained with validated analytical methods . Thus, this study aims to evaluate the content of vitamins in supplements acquired in trade of São Paulo, the effect of storage in these compounds and compare the analyzed values with the values described in the labeling. Therefore, the analytical methods for determination of antioxidant vitamins by high performance liquid chromatography (HPLC) and ultra performance liquid chromatography (UPLC - MS) with a diode array detector (DAD) will be validated for supplements. The stability of vitamins will be evaluated every 6 months during the 18 months and the analysis of labelling will be performed in accordance with current Brazilian legislation. (AU)
