Abstract

Foodborne diseases have always been considered a problem not only in the production of food of animal origin, but also in public health. But in recent years mainly due to the demands of international bodies on exported products and end consumers for a quality product, has been the focus of discussions in recent years. Salmonella spp. Is the main and most important agent involved in foodborne diseases. In addition to biosecurity, alternative measures should be implemented for control, such as specific vaccinations in hens and broilers, acquisition of free batches of the agent, use of organic acids and probiotics that aid in inhibiting the growth of Salmonella spp. Probiotics are bacteria that are part of the natural microbiota of birds, for example, Lactobacillus spp. Which induce the balance of the intestinal microbiota favoring several beneficial actions for the host, exerted by the complex and dynamic intestinal microenvironment. One such action is the inhibition of Salmonella spp. by Lactobacillus spp. That among others, a form of inhibition is intra and interspecies communication, termed quorum sensing, where bacteria notice changes in the environment through signaling substances secreted by individual cells and are recognized by specific receptors of another bacterium that leads to modification of bacterial behavior, resulting in a collective response. The objective of this work will be to evaluate the capacity of Lactobacillus spp. isolates from chickens inhibit the growth of Salmonella Heidelberg by the quorum sensing mechanism in vitro and in vivo.
