Abstract

Inflammatory bowel disease is a chronic process in the gastrointestinal tract. Although the disease appears to be multifactorial (such as environmental, genetic and immunologic), a common denominator to most of the proposed mechanisms is cellular damage mediated by oxidative stress.The aim of this study is to evaluate the dietary antioxidant ingestion from Ulcerative Colite (UC) patients treated in ambulatory. Data such as, socio economic, clinical course, disease stage, dietary intake, and nutritional status will be assessed. The evaluations will be by: interview, clinical exam, biochemical tests, endoscopic procedures and 24 recalls.Keywords: oxidative stress, dietary antioxidants, ulcerative colite (AU)
