Abstract

Hypertension is characterized by increased blood pressure and represents a risk factor for cardiovascular disease, with medical costs and socioeconomic levels, stemming from its complications. The prevalence of hypertension is influenced by a number of factors such as age, sex, ethnicity, socioeconomic status and diet. Control mechanisms of hypertension are varied, however, the Renin-Angiotensin System stands out because it involves the mechanism of action of angiotensin-converting enzyme (ACE), involved in the control of hypertension through vasoconstriction. Protein foods have attracted the interest of researchers, due to a series of evidence to show they have bioactive compounds with anti-hypertensive. Collagen, a protein of importance in several metabolic processes of the body, when hydrolyzed, can display anti-hypertensive property. Collagens from different sources are studied and related to the inhibitory activity of ACE, with antihypertensive effects. This project has as objective to evaluate the antihypertensive activity of peptides derived from hydrolysates of different types of collagen in vitro and also the activity of gastrointestinal enzymes on these bioactive peptides.
