Abstract

Bee pollen is one of the products derived from apiculture being produced by bees from floral pollen. It contains high nutritional level, sugar, fiber, essential amino acids, saturated and unsaturated fatty acids, minerals and vitamins, and bioactive compounds. Bee pollen composition varies due to botanical and geographical origin. This study aims at determining the physicochemical features, biological properties and botanical origin of bee pollen from the Apis mellifera bees based on samples collected in different Brazilian states whose data has not been described yet in literature. The dehydrated samples will have the following compounds being assessed: moisture contents, proteins, lipids, ashes, minerals, phenolic compounds and flavanoids (spectrophotometric method and liquid chromatography - HPLC), antimicrobial and antioxidant activity (DPPH method and method ORAC), botanical origin and color, besides sanitary quality of the samples (microbiological analysis). Once completed, this study is expected to identify nutritional and biological variables among samples of dehydrated bee pollen correlating them with the region where they were collected in order to generate new data to be published aiming at assisting in the monitoring of quality parameters and therefore collaborating on adding value to the product.
