Abstract

The objective of this project is to investigate the feasibility of fluidized bed technology to encapsulate the extract and polyphenols of Myrcia uniflora, aiming the improvement of their stability and functional properties. The Myrcia uniflora is popularly knowed as "pedra-hume-caá", and has been widely used in the northwest of Brazil in the treatment of diabetis mellitus. The aqueous extract of Myrcia uniflora showed positive effects on glucose homeostasis, reducing the hyperglycemia, the polyphagy, the polydipsy, the urinary volume and excretion of glucose and urea. Several processing variables, such as feed flow-rate of fluidization air, atomizing conditions, process temperature and technological carriers. The effects of processing variables will be measured through determination of encapsulating efficiency and pharmacotechnical properties of the product, such as morphology, product size distribution, solubility, hygroscopicity, storage stability, content of bioactive marker compounds and dissolution release.
