Abstract

Saturated fatty acids in bovine meat are directly associated with increased blood cholesterol level and may lead to the development of cardiovascular diseases. Thus, research studies aiming at producing meat with beneficial characteristics to "human health" are more and more relevant, given the role of this food as the main nutritional protein source. This project aims to evaluate and compare, by meta-analysis, the quality of meat of steers when they are fed with added fat sources, and finished on pasture or feedlot. And thus, compare and try to obtain informations from finishing system wich produces a better quality meat. 313 animals will be used, referring to experiments already completed, or will be developed by the research group under the guidance of Profa. Telma T. Berchielli, from the Department of Animal Science, Faculty of Agriculture and Veterinary Sciences, São Paulo State University in Jaboticabal, São Paulo. Some meat quality parameters will be evaluated: slaughter weight, hot and cold carcass yield, and comercial cuts (special hindquarter, forequarter and spare rib), in addition to loin eye area, subcutaneous fat thickness, tenderness (shear force), thawing and cooking losses, sensory panel analysis, colour and fatty acid profile of longissimus muscle and subcutaneous fat of animals finished in feedlot or pasture. Metaanalysis will be carried out by graphical examination (to observe biological coherency), correlation (to identify correlated variables) and variancecovariance analysis of the data using the GLM procedure.
