Abstract The food indutry remove the reddish-pink peanut skin of the peanut before use it due its astringent taste. In 2011/2012 were produced over 918 tons of peanut skin around the world. The commercial value of this residue is very low, however this film is very rich in bioactive compounds such as catechins. Catechins are being studied for its health benefits as decrease blood level of LDL, inhibition of LDL oxidation in the prevention of cardiovascular diseases, DNA protection against free radicals reducing the risks of cancer and preventing inflammation by inhibiting histamine loss. This project aims to develop a Dissolving Oral mucoadhesive film based on gelatin and HPMC to prolong in organisms the release of these bioactive compounds present in the peanut skin. The extract will be characterized in phenolic content, antioxidant activity and determination of catechins and aflatoxins. The films will be produced by casting in five different formulations varying the percentage of gelatin and HPMC with constant sorbitol concentration. For each formulation of the films will be tested three concentrations of hydroalcoholic extract of peanut skin. The films will be analyzed for mechanical properties, color and opacity, infrared spectroscopy, electron microscopy, controlled release, disintegration time and adhesivity. The accelerated stability studies will be made with the formulation that presented better properties for one Oral Dissolving film: disintegration time lower, better mucoadesividade, higher concentration of phenolics in controlled release as well as good mechanical properties and color and opacity. | |
