Abstract

In recent years, Brazil has undergone profound political and economic changes that are also reflected in the food and the Brazilian way of life. Despite the favorable decrease in the prevalence of food insecurity (FI), this has been accompanied by an alarming increase in overweight and other risk factors for chronic diseases. Studies that seek to understand how the food environment can be a conductor of FI are needed for the general understanding of this complex public health problem. Objective: To investigate the factors of the food environment that contribute to or hinder the achievement of Food and Nutritional Security. Material and Methods: A cross-sectional study using secondary data collected in the second half of 2013, arising from a study in the municipality of Embu das Artes, São Paulo Metropolitan Region. The food environment was assessed, according to the supply of comercialized food for household consumption through indicators of availability, variety, quality and price in assigned territories of four Basic Health Units (BHU). Based on these territories, home interviews were conducted with residents of the evaluated territories. Analysis of the results: This study will provide the improvement of both data analysis and data management in relation to food environments and food purchase behaviors. A descriptive analysis of continuous variables and categorical variables will be conducted seeking to characterize the profile of the local food trade and the residents of the regions. Possible differences will be investigated in relation to the food acquisition profiles among residents of different territories. Sociodemographic variables are also described and investigated. (AU)
