Abstract

Background: Accurate dietary assessment in children is essential to investigate the associations between diet and disease. The increasing prevalence of obesity, cardiovascular risk factors, diabetes and other diseases with long-term consequences, highlights the relevance to prevent these diseases development since childhood. Therefore, validating dietary assessment methods in children is paramount to identify and primary prevent these diseases. Aim: To validate relatively two questionnaires [24h Dietary Recall (R24h) and Food Frequency Questionnaire (FFQ)] to estimate the habitual consumption of iron, and Fruit and Vegetables (FV) in South American children. Methods: Transversal study in a sample of children (6-10 years) from São Paulo and Teresina (Brazil), Buenos Aires (Argentina) and Lima (Peru). The R24h will be answered 3 times (2 non-consecutive week days, 1 weekend day); and FFQ will be responded twice (15 days interval). To validate these questionnaires blood concentration biomarkers will be used: iron and ferritin (for habitual iron intake); and retinol, beta-carotene, alfa-tocopherol, and ascorbic acid (for habitual FV consumption). Measures of central tendency and dispersion will be used for continuous variables. Pearson's correlation coefficient will be applied to test the validity of methods. Shapiro-Wilk test will be used to check if data show parametric distribution. Otherwise, we will adjust this normality with the logarithmic or quadratic transformation of data. Subsequently, sensitivity test will be done to test possible bias. We will consider 5% of statistical significance.
