Abstract

The Atlantic Forest is one of the six major biomes, covering about 35 % of all plant species in the country. In this biome, there is a wealth of natural resources that can bring economic and nutritional benefits to the population when exploited sustainably. One of the plant species with great potential is the cambuci, a fruit rich in bioactive compounds such as flavonoids, vitamin C and compounds with antioxidant capacity. It also contains ± - amylase and ± - glucosidase inhibitors, enzymes that are related to the control of diabetes mellitus type 2. However, this fruit presents a high water activity, and consequently it is extremely perishable, which, considering the harvest period, makes the fruit's market restrict to the population that lives near the production. Due to the perishability, the fruits are commercialized frozen, turning all the logistic of the transport more difficult. To solve this, the use of post-harvest processes in order to increase the shelf life of fruits is important, since, in addition to adding value to the product, allows the spread of its consumption and the food enrichment to a greater number of people. The increase of the cambuci shelf life was explored by few studies and, therefore, there is an opportunity to evaluate techniques for increasing stability. Thus, this project aims to evaluate the application of osmosis with the use of hypertonic solutions as pre-treatment to dehydrate the cambuci, from the construction of equilibrium diagrams considering biphasic systems. By doing that, alternatives to its marketing and preservation of bioactive compounds are expected to be found. (AU)
