Abstract The application of ionic liquids (LI) in extraction processes is a viable alternative that follows the principles of green chemistry, optimizing the obtaining of industrial interest molecules in sustainable processes with lower generation of toxic waste. The Ministry of Health regulates the use of organic solvents Convention for the extraction of bioactive compounds in food, allowing the residual organic solvent (varying according to chemical species) is only in the range of 1 to 10 mg / kg of processed food, very low values that make this extremely limited use. Functional foods are excellent choices for prevention of chronic noncommunicable diseases (NCDs). Obesity is a multifactorial disease that can result from a fetal programming, characterized by chronic inflammation resulting low degree of excess intake of saturated fatty acids and / or trans fatty acids. The intrauterine environment has crucial role in the development of diseases in adulthood. The concept of nutritional metabolic programming assumes that inadequate maternal nutrition during pregnancy and lactation can promote permanent changes during fetal development period and neonate. Thus the objective of the project is to develop and optimize an extraction method using ionic liquids, to obtain carotenoids from the pulp of the fruit of peach palm (Bactris gasipaes), which can be used as natural pigments and additives in the food industry, and testing the extracts on metabolic programming model. The project foresees the development of a new methodology for carotenoid extraction and its application to health promotion and the search for this food matrix, little explored and discarded. Moreover, the application of these extracts in metabolic programming models is unprecedented, and will generate new strategies for the treatment and prevention of obesity. (AU) | |
