Abstract

Biocides, because they have antiseptic and/or disinfectant action, have become popular for the disinfection of surfaces and materials in the food industry. The increased use of biocides is of concern because it can induce cross-resistance to antibiotics. In Brazil, the legislation for supervision of production and marketing of artisanal cheeses is complex and has numerous gaps, and these products can become an important public health issue, due to contamination with pathogenic bacteria. As extensive use of biocides can lead to resistance to antibiotics, this BEPE project aims to determine the biocide tolerance of staphylococci isolated from artisanal cheeses, in order to evaluate their possible contribution in the transmission of antimicrobial resistance in the cheese production chain. The phenotypic profiles will be analysed by determination of the Minimum Inhibitory Concentrations (MIC) for benzalkonium chloride, cetrimide, hexadecyl pyridinium chloride, triclosan and hexachlorophene using the microdilution method in broth in microtiter plates and the genotypic profiles will be determined by Polymerase Chain Reaction (PCR) for the qacA/B and smr (qacC) genes. The statistical significance of the correlations between biocide tolerance levels and presence of biocide tolerant genes will be analyzed with the SPSS statistical program. (AU)
