Abstract

The use of active packaging that exploits the release of compounds during storage has great potential to be explored to extend food shelf life and for the development of functional foods. Pomegranate peel is a by-product with a large amount of phenolic compounds (mainly ellagitannins and ellagic acid derivatives) with biological and antimicrobial properties that can be extracted, isolated and incorporated into packaging. The aim of the study is to evaluate the potential effect of combining extraction techniques, pressurized liquids with ultrasound-assisted extraction associated with the use of expansion gas, to carry out the process selectively and with high yield for the production of extracts with high concentration of specific phenolic compounds from the pomegranate peel. Preliminary results indicate that it is possible to fractionate and concentrate the compounds of the pomegranate peel, being possible to obtain an extract rich in ellagitannins and another in ellagic acid and derivatives. Optimization of conditions will improve separation and process yield. The fractionated extracts obtained will be used to prepare a film for use in food using supercritical technology. The films will be analyzed before and after impregnation for their physical properties and the concentration of added compounds. (AU)
