Abstract

The leaves and bark from beet processing can be used to produce compounds with higher added value such as betalain and the pigment called betanin, which has several characteristics, including antioxidant activity. Among the methods of extracting bioactive compounds, subcritical extraction stands out because it has the advantages of being a fast, selective, non-degrading process and free of toxic residues. This work aims to develop a betanin and vitexin extraction strategy using subcritical water technology. The pilot plant allows the coupling of subcritical water extraction and on-line analysis by high performance liquid chromatography (HPLC). Critical parameters that affect extraction and purification efficiency will be researched and optimized by response surface methodology (RSM). The temperature will vary between 40, 80 and 120°C and the flow rate between 2, 6 and 10 mL/min, with a solvent-feed mass ratio equal to 40 and a pressure of 15 MPa as the fixed parameters. The purification of the extract will be carried out in a column packed with the adsorbent PoraPak" Rxn. It is expected that the method to be developed will provide higher yields of betanin and vitexin production compared to conventional methods. Finally, the pilot plant system with coupling (extraction-water-subcritical×HPLC) is expected to be a powerful tool to monitor the extraction process in real time.
