Abstract

Brazil is the third largest peanut producer on the American continent, behind only the United States and Argentina. The state of São Paulo stands out as the biggest national producer and in the last few years has shown great changes in the planted cultivar and consequently an increase in productivity. Currently, cultivars with high oleic acid content have prevailed in commercial peanut plantations due to their resistance to various diseases of the crop and greater stability to lipid oxidation, thus increasing their shelf life. Due to the production characteristics of peanut, this crop is susceptible to infection by aflatoxin-producing fungi, which are carcinogenic secondary metabolites to humans. Climatic factors such as high soil temperature and drought stress (low humidity) favor contamination due to the availability of aflatoxigenic fungi in the soil in direct contact with the peanut, making it difficult to control. These factors were used to develop a mathematical model in Australia in order to predict aflatoxin production in peanuts at the pre-harvest stage. Such models do not exist in Brazil and once validated this model could be used as a tool for deciding on the best time for plantation and harvest to improve the national peanut quality. The drought stress, besides favouring fungal infection and toxin production, can alter the peanut lipid compostion and bioactive compounds such as tocopherol, causing a reduction of this natural antioxidant.
